One of the most important things we learned during this journey is that honey should not be rushed.

Many commercial honey varieties are heated and ultra-filtered to create a uniform appearance. While this makes the honey look clear and consistent, it can also remove some of the natural elements that give honey its value.

Raw forest honey, when handled carefully, retains:

  • Natural enzymes
  • Antioxidants
  • Pollen traces
  • Micronutrients from diverse floral sources

These elements are what make honey more than just a sweetener.

They make it nourishment.
